I am so excited writing this post because I have come with me a yummy chocolate coconut banana bread recipe. Wow! What a mouthful to pronounce but trust me this bread is so yummy, you have to try it ASAP. This is just for those ‘once in a while snack on something sweet and yummy’ kinda bread. I wanted to share a coconut bread recipe but decided to make it a twist. I hope you’d love it. I love this recipe because it is simple, easy to make but very delicious. Chocolate Coconut Banana Bread
- 1 tsp Baking powder
- 1 tsp Baking soda
- 1 tsp Vanilla extract
- 2 tsp Coconut extract
- 1 cup Chocolate chips
- 1 cup Coconut flakes
- 1 cup Blended coconut
- ½ cup Melted butter
- ½ cup Evaporated milk
- ½ cup Pure honey
- ½ cup Granulated sugar
- ½ tsp Salt
- 1½ cups Flour
- ½ cup Chopped walnuts (optional)
- 1 Beaten egg
- 2 Mashed bananas
For bread topping
- ½ cup Chocolate chips
- ½ cup Coconut flakes
In a large bowl, mix flour, baking soda, baking powder and salt. Then set aside.
In another bowl, mix all other ingredients for the bread. Then pour into flour mix and mix altogether until all ingredients are well incorporated and it has formed a batter.
Pour batter into a lightly greased pan.
Bake in the preheated oven (335ºF/179ºC) for 45 minutes to 1 hour or until inserted toothpick comes out clean. This can depend on the working capacity of your oven.
Once bread is ready, remove from the oven and set aside to cool
Melt chocolate chips (you can add little oil if it is too thick for you) and spread on top of bread. Then sprinkle some coconut flakes on top.
