For meat pie dough

  • 3 cups flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 5 tsbp margarine
  • ½ cup cool water
  • 1 beaten egg

For meat pie filling

  • 1 tsp paprika
  • 1 small scotch bonnet
  • 2 tbsp canola oil
  • ½ tsp chilli powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 small irish potato
  • 1 medium-sized carrot
  • 1 beef stock cube
  • ½ water
  • chopped onions
  • regular ground beef

For meat pie dough

  1. In a large bowl, add flour, baking powder, salt and mix altogether.

  2. Add solid margarine to the flour and mix until flour feels like breadcrumbs.

  3. Add 1 beaten egg and/or water (little by little) then mix until it forms a dough. You don't need too much water so your dough doesn't become too sticky and prevents it from being stretchy.

  4. After your dough has been formed, cover with a thin film and place in the fridge for five minutes.

For meat pie filling

  1. Add 2 tablespoons of canola oil (you can use any vegetable oil) to a heat pan.

  2. Add chopped onions and stir fry for a bit before adding regular ground beef.

  3. To season, add paprika, onion powder, scotch bonnet, chilli powder, salt, beef stock cube, carrots, potatoes, water, then  cover and allow to cook for a bit before adding flour mixed with water.

  4. Stir immediately to prevent lumps from forming and leave to cook for extra 2 minutes before bringing down from the heat. You carrots and potatoes should be properly cooked or almost tender, although they would still cook in the oven.

For meat pies

  1. Roll out dough and cut out a circular shape using a round bowl, pot cover or cutter.

  2. Add filling to the center of the dough. Rubbing beaten egg for sealing on top of one end, lift the other end and close on top of sealing end and press down, then finish with a fork. Repeat the same steps for the rest of the dough and/or try other shapes.

  3. Place meat pies on greased baking tray or parchment paper.

  4. Glaze top of meat pie by rubbing beaten egg and then poke the center of the meat pie with a fork for air exposure.

  5. Bake in the oven for 30 to 45 minutes.

  6. Your Nigerian meat pies are ready. Enjoy!!!

  7. Let me know how yours went down.
