How are you doing today??? I hope you’re doing very well. So you know I love making and sharing simple recipes. Well today, I decided to bring you one of the simple ways of making Nigerian Coconut Fried Rice. For the meat stock, it is pretty basic. I boiled my chicken using stock cubes, salt, onion powder, curry powder, thyme, ginger, garlic, chilli powder and bay leaves. For my coconut rice, I use coconut milk, coconut flakes and coconut oil most of the time which I think is a great combination. I noticed many people don’t really use coconut flakes but sweetened coconut flakes does add a nice flavour to the dish. You should try this recipe because it is absolutely delicious bursting with unique flavours. Nigerian Coconut Fried Rice
- Chicken stock
- Coconut milk
- Coconut oil
- Sweetened coconut flakes
- Unsweetened coconut flakes
- Mixed vegetables
- Onion powder
- Chilli powder
- Salt to taste
- Regular long grain rice
- Scotch bonnet
- Spring onion
In a pot, add chicken stock (any choice of meat stock) followed by coconut milk. Cover pot and allow to simmer for about 2 minutes.
Add sweetened coconut flakes (you can opt for unsweetened coconut flakes) to add a little more tastiness and flavour to the dish.
Add parboiled rice and mix altogether before adding salt to taste, scotch bonnet and spring onion. Cover, then allow rice to cook.
Once rice is properly cooked. Set aside and begin to fry vegetables.
In a pan, add coconut oil and after it has been heated, add onions and stir fry for 30 seconds before adding mixed vegetables.
Season vegetables with onion powder, chilli powder and salt before adding cooked coconut rice.
Stir fry rice for roughly 2 to 3 minutes before bringing down from heat.
