Helloooo lovely people,

How are you doing today??? I hope you’re doing very well. So you know I love making and sharing simple recipes. Well today, I decided to bring you one of the simple ways of making Nigerian Coconut Fried Rice. For the meat stock, it is pretty basic. I boiled my chicken using stock cubes, salt, onion powder, curry powder, thyme, ginger, garlic, chilli powder and bay leaves. For my coconut rice, I use coconut milk, coconut flakes and coconut oil most of the time which I think is a great combination. I noticed many people don’t really use coconut flakes but sweetened coconut flakes does add a nice flavour to the dish. You should try this recipe because it is absolutely delicious bursting with unique flavours. If you would like to see how to achieve this recipe, then please keep reading or watch the video at the end of the post.
